  • 2 tablespoons balsamic vinegar, or more to taste
  • salt and ground black pepper to taste

Begin by processing the beets in a food processor equipped with a shredding attachment to create uniform shreds.

Next, melt the butter in a medium-sized skillet over a moderate heat setting. Introduce the shredded beets into the skillet and cook, stirring occasionally, until they have begun to lose some of their firmness, approximately 5 minutes.

Then, add a sufficient amount of water to the skillet and cover it with a lid. Continue to cook the beets in their own juices, allowing them to become completely tender and soft, around 10 minutes. Stir the beets with a spoon to distribute them evenly; add a splash of balsamic vinegar and season the dish with salt and pepper to taste.
