  • 3 1/2 cups pitted tart cherries
  • 2 tablespoons water
  • 2 tablespoons cornstarch

Boil the water, sugar, and cinnamon in a saucepan until it reaches a rolling boil; then decrease the heat and let it gently simmer for 3 to 4 minutes, or until the sugar has completely dissolved. Add the cherries and return the mixture to a boil; continue to cook over reduced heat until the cherries have become tender, approximately 5 minutes.

Mix 2 tablespoons of water with cornstarch in a small bowl; carefully pour the mixture over the cherry and sugar concoction in the saucepan. Stir constantly until the desired consistency is achieved, typically within 1 to 2 minutes. Allow the mixture to cool and settle, which should take around 10 to 15 minutes. Transfer the cooled mixture to a suitable container and refrigerate for up to three days.
