  • 2 cups plain yogurt, divided
  • 3 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1/3 cup chopped fresh cilantro
  • 2 teaspoons paprika
  • 1/2 teaspoon ground turmeric
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 6 cloves garlic, minced

Make shallow, parallel cuts on the surface of the chicken pieces to facilitate the penetration of flavors. Combine lemon juice and meat tenderizer in a small bowl, then apply to the chicken surfaces. Position the chicken pieces in a shallow dish.

In another container, blend together yogurt, cumin, coriander, cilantro, paprika, turmeric, salt, pepper, and garlic until a smooth paste forms. Transfer the mixture to a bowl and stir in the remaining 1 1/2 cups of yogurt. Pour this mixture over the chicken pieces, cover the dish, and refrigerate for at least 8 hours or overnight.

Grill the chicken for 30 to 45 minutes, turning it frequently to prevent burning and ensure even cooking. The chicken is done when its juices run clear, with smaller pieces finishing first.
