- 2 cups water
- 1 1/8 cups white sugar
- 3 tablespoons tamarind paste

Heat oil in a saucepan over medium heat, allowing it to warm up and become fluid. Add the cumin seeds, ginger, a pinch of heat from the cayenne pepper, fennel seeds, and a hint of umami from the asafoetida powder; cook and stir for approximately 2 minutes to allow the flavors to meld together.

Next, add water to the pan along with sugar and tamarind paste. Stir until everything is well combined, then bring the mixture to a rolling boil. Once boiling, reduce the heat to a low simmer and let it cook for 20 to 30 minutes, or until the mixture has darkened in color and reached a thick consistency that coats the back of a metal spoon. Note that the sauce will be quite thin at this stage, but it will thicken as it cools.
