  • 14 ounces chicken breasts, cut into bite-sized pieces
  • 1/3 cup water
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons tamarind paste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 fresh green chile pepper, or more to taste
  • 1/2 teaspoon grated ginger

Combine soy sauce and flour in a large bowl until they form a smooth, even mixture.

Add chicken to the bowl and mix it thoroughly with the sauce until the chicken is evenly coated.

In a separate bowl, whisk together water, fish sauce, brown sugar, and tamarind paste until well combined.

Heat a substantial amount of oil in a wok over an elevated heat setting.

Add minced garlic, sliced chile pepper, and grated ginger to the wok and sauté for 1 to 3 minutes.

Take the chicken out of its marinade and add it to the wok; stir-fry for 1 to 2 minutes.
