Tamale Pie
Ingredients
  • 1 1/2 pounds lean ground beef
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 cup frozen corn
  • 1 (2.25 ounce) can sliced black olives, drained
  • 1 tablespoon chili powder
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes, or to taste
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 1 tablespoon white sugar
  • 1/2 teaspoon salt
  • 1/2 cup cornmeal
  • 1 cup shredded Cheddar cheese
  • 2 eggs, lightly beaten
  • 1 tablespoon sour cream, or to taste
Instructions
1
Preheat your oven to a medium-high temperature, specifically 350 degrees F (175 degrees C).
2
Next, take a 9x13-inch baking dish and lightly coat it with non-stick spray or butter to prevent food from sticking.
3
In a large skillet, heat it over an elevated heat setting until it reaches a high temperature. Cook and stir ground beef, onion, and bell pepper in the hot skillet until the beef is nicely browned and crumbly, taking around 5 to 7 minutes.
4
Remove the excess fat from the skillet by draining and discarding it. Then, stir in a variety of ingredients including tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring this mixture to a gentle simmer, approximately 5 minutes later.
5
Reduce the heat in the skillet to a low setting and let it simmer for 5 minutes. Stir in 1 cup of Cheddar cheese and continue to simmer until the cheese is fully melted, taking around 3 to 5 minutes.
6
Remove the skillet from the heat source and transfer the mixture to the prepared baking dish.
7
In a separate saucepan, heat milk, butter, sugar, and salt over an elevated heat setting until the butter has melted, taking around 2 to 3 minutes.
8
Reduce the heat in the saucepan to a low setting and stir in cornmeal gradually, stirring vigorously with each addition until it reaches a smooth consistency. Remove the saucepan from the heat source and stir in 1 cup of Cheddar cheese.
9
Gradually pour beaten eggs into the saucepan while stirring vigorously until they are fully incorporated.
10
Pour this mixture over the filling in the prepared dish, smoothing it evenly across the surface.
11
Place the dish in a preheated oven and bake until the top is golden brown and the filling is bubbly, taking around 30 to 40 minutes.
12
Once done, allow the pie to rest for 10 to 15 minutes before serving.
