Ingredients
- cooking spray
- 2 pounds ground beef
- 2 cups diced poblano peppers
- 1 (16 ounce) jar salsa
- 1 teaspoon salt
- 1 teaspoon ground dried chipotle pepper
- 1/2 teaspoon dried oregano
- 2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
- 2 eggs
- 2/3 cup milk, divided
- 8 ounces frozen corn, thawed
- 4 ounces shredded Cheddar cheese, divided
- 4 ounces shredded Monterey Jack cheese, divided
Instructions
1
Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take a 9x13-inch casserole dish and give it a light coating of cooking spray to prevent sticking.
3
In a large, heavy-bottomed pot, heat some oil over medium-high heat and add the ground beef. Cook and stir constantly until the meat starts to turn a nice brown color and releases its natural juices, which should take around 5 minutes.
4
To reduce the heat and prevent burning, switch to medium heat and stir in diced poblano peppers, a spoonful of salsa, some salt, a dried chipotle pepper for added flavor, and a sprinkle of oregano. Continue to cook and stir until the beef is no longer pink and has become crumbly, which should take about 10 minutes.
5
Simultaneously, in a separate bowl, whisk together the contents of one package corn muffin mix with an egg and 1/3 cup of milk until you get a smooth, combined mixture.
6
Pour the corn muffin mix mixture into the prepared casserole dish and spread it evenly.
7
Top the corn muffin mix with a layer of corn, followed by half of the shredded Cheddar cheese and half of the shredded Monterey Jack.
8
Spread the ground beef mixture over the cheese layer, making sure to cover it evenly.
9
Mix together the remaining corn muffin mix, egg, milk, Cheddar cheese, and Monterey Jack cheese in a separate bowl.
10
Using a spatula, carefully spread the final corn muffin mix mixture over the beef layer to within 1/2 inch of the edges of the dish.
11
Place the casserole in the preheated oven and bake until it reaches a golden brown color, which should take around 50 to 60 minutes.
