In a bowl, thoroughly mix eggs with dashi stock, sugar, mirin, and soy sauce until the sugar has fully incorporated.

Carefully apply a thin layer of this mixture to a greased nonstick skillet and heat over medium temperature.

Allow the egg mixture to set on the bottom of the pan, but still retain a hint of moisture on top, approximately 1 minute.

Utilize a spatula to lift one edge of the pan and roll up the egg mixture into a compact, cylindrical shape.

Slide this rolled omelet to one side of the skillet and reapply a thin layer of egg mixture, gently lifting the first omelet roll to create space for the new layer.

Roll up the first omelet in the fresh egg mixture and push it towards the edge of the skillet, as before.

Continue this process with the remaining egg mixture, periodically re-oiling the pan if necessary to ensure smooth rolling.
