Taiwanese Dan-Bin with Bacon and Egg
Ingredients
  • 1 slice bacon
  • 1 egg, beaten
  • 1 (6 inch) corn tortilla
  • 1/4 cup sweet corn kernels
  • 1 tablespoon smooth salsa

Heat a pan over high heat to sear the bacon slice, then remove it and set it aside. Lower the heat to a moderate level. Gently pour the egg into the pan, adding some corn flakes on top. Cook for a very short time, just enough to set the egg.

Place the tortilla flat on top of the entire egg mixture. Once the egg is solidly attached to the tortilla, carefully flip it over and position the bacon slice on top. Add a spoonful of salsa over the bacon, then wrap everything together. Take it out of the pan, cut into bite-sized pieces, and serve immediately.
