Taco-Zucchini Boats
Ingredients
  • 4 zucchinis, halved lengthwise and seeded
  • 1 pound ground turkey
  • 1 (1.25 ounce) package taco seasoning
  • 3/4 cup water, or as needed
  • 2 red sweet pepper, finely chopped
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL® Mexican Lime & Cilantro)
  • 1/2 white onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 cup sour cream
  • 1 (1 ounce) packet sour cream seasoning mix (such as Old El Paso® Zesty Sour Cream Seasoning Mix)
  • 1 bunch green onions, diced
  • 1/2 cup shredded Muenster cheese
  • 1/2 cup shredded Cheddar cheese

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

To prevent the baking dish from sticking, lightly coat its bottom with a non-stick cooking spray.

Fill a large pot with water and place it on the stovetop over high heat, bringing the water to a rolling boil.

Cook zucchini halves in the boiling water for just enough time to make them tender, approximately 1 minute.

Remove the zucchini halves from the water and arrange them in the prepared baking dish, with their cut sides facing upwards.

Heat a large skillet over medium-high heat on your stovetop.

Cook and stir ground turkey in the hot skillet until it is browned and crumbly,! about 5 to 7 minutes; drain any excess grease that may have accumulated.

Return the skillet to medium-high heat and pour water over the turkey, adding taco seasoning to taste.

Cook until the water thickens and coats the turkey evenly, approximately 5 minutes.

Add diced red peppers, tomatoes, green chiles, onion, and cilantro to the skillet; cook and stir until the peppers are softened, taking about 5 minutes more.

Stir together sour cream and a packet of sour cream seasoning mix in a bowl.

Using a slotted spoon, fill the hollows of each zucchini half with the turkey mixture and press it firmly into place.

Top the turkey mixture with about half of the sour cream mixture, followed by a sprinkle of green onions, Muenster cheese, and Cheddar cheese.

Place the baking dish in the preheated oven and bake until the cheese is melted and the zucchini is cooked through, approximately 30 minutes.

Finish by topping with the remaining sour cream mixture.
