- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can Mexican-style corn, drained
- 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TELĀ®)
- 1 quart tomato juice
- 1 bunch cilantro, minced, or to taste
- 1 large lime, halved
- 1 pinch salt and ground black pepper to taste

Heat a substantial, deep-walled cooking vessel over high heat until it reaches a moderate-high temperature. Cook the ground beef in this hot skillet, stirring frequently, until it is nicely browned and crumbly, taking around 5 to 7 minutes. Remove the excess fat from the pot.

Add sliced onions and minced garlic to the skillet. Cook over a moderate heat setting, stirring constantly, until the onions start to soften and become translucent, approximately 5 minutes. Introduce taco seasoning into the mixture; cook and stir until it emits a pleasant aroma, 1 to 2 minutes. Combine the ground beans, corn kernels, and diced tomatoes into the skillet. Add tomato juice to the mixture and scrape any burnt residue from the bottom of the pan using a wooden spoon.

Bring the mixture to a gentle boil; add chopped cilantro and squeeze juice from lime halves into the pot. Allow the flavors to blend together, taking around 15 to 20 minutes. Season with salt and pepper to taste
