  • 1 (1 ounce) package taco seasoning mix
  • 1 (15.25 ounce) can kidney beans, drained
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, drained
  • salt and pepper to taste
  • 1/2 cup shredded lettuce

Begin by placing a saucepan on the stovetop and filling it with 3 cups of water. Bring this mixture to a rolling boil, then carefully add the rice and stir it gently to distribute the grains evenly.

Next, decrease the heat to a lower setting and cover the saucepan with a lid. Continue to cook the rice mixture for 45 minutes, allowing it to absorb the water and become tender.
