  • 4 (6 inch) corn tortillas
  • 8 ounces shredded Cheddar cheese
  • 8 tablespoons sour cream
  • 2 roma (plum) tomatoes, chopped
  • 2 green onion, chopped
  • 1 (4 ounce) can diced green chiles, drained
  • 1/2 avocado, diced
  • 1 tablespoon black olives, sliced

Preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius for those using metric measurements).

Next, cook the refried beans in a saucepan over medium heat until they are heated through. Be sure to stir occasionally to prevent burning.

In a separate pan, sear the ground beef over medium-high heat until it is browned. Add the seasoning packet to the pan and stir well.

While the beans are cooking, prepare your oven rack for baking. Place a small amount of vegetable oil in a large skillet and heat it over medium-high heat until the oil is hot.

Carefully place one corn tortilla in the skillet and let it cook for 15 seconds on each side. Repeat this process with the remaining tortillas, allowing them to drain on paper towels after each use.
