Taco Chicken Tostadas
Ingredients
  • 2 skinless, boneless chicken breasts, diced
  • 1/2 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 6 corn tostada shells
  • 1 cup shredded Mexican cheese blend
  • 1 tomato, diced
  • 3/4 red onion, diced
  • 3/4 green bell pepper, diced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup salsa, or to taste
  • 1/4 cup sour cream, or to taste

Heat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.

Next, place boneless chicken breasts in a skillet over medium heat. Add taco seasoning to taste and cook until the chicken reaches an internal temperature of 165 degrees Fahrenheit or 74 degrees Celsius, which should take around 5 to 7 minutes.

At this point, spread a thin layer of refried beans onto each of the tostada shells. Then sprinkle some Mexican cheese on top of the beans. Divide the cooked chicken among the tostada shells, placing it on top of the cheese layer.

Now, add a mixture of diced tomatoes, red onion, and bell pepper on top of the chicken. Place these tostada shells on a baking sheet.

After that, bake the tostadas in the preheated oven for 10 to 15 minutes, or until they are crispy.

Once done, take the tostadas out of the oven. Sprinkle them with some chopped cilantro and serve with a dollop of salsa and sour cream on top.
