Taco Casserole
Ingredients
  • cooking spray
  • 2 pounds ground beef
  • 1/2 cup diced onion
  • 1 1/2 cups water
  • 9 tablespoons taco seasoning mix
  • 5 flour tortillas
  • 1 (10 ounce) can whole kernel corn, drained
  • 2 cups shredded Cheddar cheese
  • 8 corn tortilla chips, or more to taste
  • 1/4 cup diced tomatoes, or to taste
  • 2 tablespoons chopped olives, or to taste
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit or 175 degrees Celsius.
2
Next, take a 9x13-inch baking dish and spray it with cooking spray to prevent sticking.
3
In a large skillet, heat the pan over medium-high heat and cook the beef until it reaches a browned and crumbly state, approximately 5 minutes.
4
To add flavor to the beef mixture, stir in a combination of water and taco seasoning. Continue cooking until the water has evaporated, about 5 minutes more.
5
Arrange a layer of tortillas in the prepared baking dish, followed by half of the ground beef mixture. Add a layer of corn on top of the beef and sprinkle with half of the Cheddar cheese. Crush tortilla chips over the cheese layer for added texture.
6
Repeat the layers, starting with tortillas, then beef mixture, corn, and finally Cheddar cheese. Finish the dish by topping it with tomatoes, olives, and a final layer of Cheddar cheese.
7
Place the baking dish in the preheated oven and bake until heated through and cheese is melted, ranging from 15 to 20 minutes.
