Taco Beef Mac Skillet
Ingredients
  • 12 ounces extra-lean ground beef
  • 2 cups water
  • 1 (14.5 ounce) can diced tomatoes in juice, undrained
  • 1 (4 ounce) can Ortega® Mild Diced Green Chiles
  • 1 (1.25 ounce) package Ortega® Taco Seasoning Mix
  • 1/2 cup dried elbow macaroni
  • 1 cup shredded Cheddar cheese, divided
  • 2/3 cup evaporated milk
Instructions
1
Sear the beef in a substantial skillet, constantly moving it to ensure even browning; discard excess moisture.
2
Combine the beef with water, crushed tomatoes including their liquid, chilies, and a blend of seasonings. Bring the mixture to a rolling boil.
3
Introduce pasta into the pot; reheat until it reaches a boiling point. Decrease heat to a low setting; cover the skillet. Cook, occasionally stirring the contents, for 14 to 16 minutes or until the pasta is fully tender.
4
Add evaporated milk to the dish; remove it from heat. Incorporate 1/4 cup of cheese into the mixture. Sprinkle the remaining cheese over the surface; cover the skillet. Allow it to rest for 5 to 10 minutes before presenting.
