Ingredients
- 1 teaspoon olive oil
- 1 large onion, chopped
- 2 pounds ground beef
- 1/2 cup chili powder
- 1 tablespoon dried oregano
- 2 tablespoons ground cumin
- 3/4 cup sliced black olives
- 2 (14 ounce) cans light red kidney beans, drained and rinsed
- 1 (16 ounce) garbanzo beans, drained and rinsed
- 1 (16 ounce) can pinto beans, drained and rinsed
- 1 (16 ounce) can black beans, drained and rinsed
- salt and ground black pepper to taste
- 4 cups mayonnaise
- 1 cup taco sauce
- 2 teaspoons hot pepper sauce
- 1 head iceberg lettuce, shredded
- 1 tomato, chopped
- 2 cups shredded Cheddar cheese
- 2 cups crumbled tortilla chips
Instructions
1
Preheat your cooking vessel over a moderate temperature setting, using oil to coat the surface. Allow the onion to cook and stir until it has lost its initial firmness and turned a pale, translucent hue, taking approximately 5 minutes to achieve this. Lower the heat to a lower temperature setting and continue cooking and stirring until the onion has reached a state of deep tenderness and a rich, dark brown color, requiring an additional 15 to 20 minutes of cooking time.
2
Next, incorporate the ground beef into the onion mixture and cook and stir until the beef has broken down into small, evenly browned fragments, eliminating any remaining pink coloration, taking around 10 minutes to accomplish this. Discard any excess oil that has accumulated during the cooking process.
3
Add a blend of spices, including chili powder, oregano, and cumin, to the mixture and stir until they are fully incorporated into the dish.
4
Remove the skillet from the heat source. Combine a selection of beans, including olives, kidney beans, garbanzo beans, pinto beans, and black beans, with the remaining mixture and allow it to cool.
5
In a separate container, combine mayonnaise, taco sauce, and hot pepper sauce. Refrigerate this mixture until it is ready to be served.
6
To assemble the dish, layer a variety of ingredients in the following order: lettuce, tomatoes, Cheddar cheese, the cooled bean mixture, tortilla chips, and finally, the dressing.
