Sykes' Hungarian Goulash

  • 3 tablespoons butter
  • 2 pounds cubed beef stew meat
  • 1 pinch caraway seeds
  • 1 pound onion, sliced
  • 2 teaspoons paprika
  • 1 clove garlic, minced
  • 1 tablespoon lemon zest
  • 1 (6 ounce) can tomato paste
  • 1 (10.5 ounce) can beef consomme
  • 1 (10 ounce) package broad egg noodles, cooked, rinsed, drained (Kosher for Passover)

Heat a large saucepan over medium heat, and melt the butter until it's fully incorporated. Add the stew meat, caraway seeds, chopped onion, and paprika to the saucepan, stirring constantly until the meat is nicely browned and the onions have lost their raw appearance. Introduce the minced garlic and lemon zest to the mixture, cooking for approximately one minute before adding the concentrated tomato paste and beef broth. If necessary, add water to achieve a suitable liquid consistency for the stew. Cover the saucepan and let it simmer over medium-low heat for 1.5 hours.

About 15 minutes before the meat is fully cooked, bring a large pot of salted water to a rolling boil. Add egg noodles to the boiling water, and cook until they're tender, approximately 8 minutes. Drain the egg noodles and serve them as a base for the stew by spooning the goulash over the top.
