Sy's Famous Challah Bread

  • 1/4 cup vegetable oil
  • 1 tablespoon salt
  • 1 1/4 cups warm water
  • 2 (.25 ounce) packages active dry yeast
  • 4 large eggs, divided
  • 6 cups all-purpose flour, or as needed
  • 1 tablespoon poppy seeds

Combine sugar, oil, and salt in a large mixing bowl or the bowl attachment of an electric mixer. Gradually add hot water, stirring until sugar and salt have dissolved completely. Add yeast to the mixture and let it sit until it becomes frothy. Then, incorporate 3 slightly beaten eggs into the mixture.

If using an electric mixer, add 4 1/2 cups of flour to the yeast mixture in three stages. Initially, mix until the flour is well combined with the dough. Next, continue adding flour until the dough becomes stringy and develops a smooth texture. Finally, add more flour until the dough is evenly coated with it.

Alternatively, knead the dough by hand. Start by adding 4 1/2 cups of flour to the yeast mixture, then work in small amounts until you achieve a smooth and elastic dough. This process should take around 8 to 10 minutes.

Transfer the dough to a greased bowl and gently turn it over several times to coat the surface evenly. Cover the bowl with a damp cloth and let the dough rise until it has doubled in size.

After the first rising, punch down the dough and allow it to rise again. The time for the second rising will be approximately 45 minutes, while the first was about an hour.

To create the braids, divide the dough into six equal parts. Shape two of these parts into braids and place them on a greased baking sheet, leaving space for the other two loaves to expand. Cover the breads and let them rise until they have doubled in size.

Before baking, brush the remaining egg on top of each loaf and sprinkle with poppy seeds.

Preheat your oven to 350 degrees F (175 degrees C).

Place the loaves in the preheated oven and bake until golden brown, approximately 35 minutes. Remove from the oven and let the loaves cool on a wire rack.
