Ingredients
- 4 eggs
- 1 1/4 cups white sugar
- 1 1/8 cups butter, melted and cooled to lukewarm
- 1 pinch salt
- 4 cups all purpose flour
- 1 1/2 teaspoons grated lemon zest
- 2 egg yolks, beaten
- seasonal colored sprinkles

Combine eggs in a large bowl and thoroughly mix with sugar until the mixture becomes dense and pale, taking around 10 minutes. Combine melted butter and salt into the egg mixture and blend until well incorporated. Gradually add flour to the mixture, incorporating lemon zest as you go. Cover and refrigerate for at least one hour or, ideally, a full night.

Heat the oven to 325 degrees F (165 degrees C). Lightly grease a cookie sheet with a thin layer of oil.

On a surface dusted with flour, roll out the dough to a thickness of 1/4 inch. Use cookie cutters to shape into desired forms. Place the cookies on the prepared cookie sheet, leaving space between each one. Brush with beaten egg yolks and add sprinkles for decoration.

Bake the cookies in the preheated oven until they are golden at the edges, taking 15 to 20 minutes. Allow the cookies to cool on racks before serving
