Swiss Cheese Rösti
Ingredients
  • 6 large potatoes
  • 6 tablespoons butter
  • 8 ounces Swiss cheese, grated
  • salt to taste
  • ground black pepper to taste
  • 2 tablespoons hot water

Boil a substantial container of salted water until it reaches a rolling boil.

Add diced potatoes to the boiling water and continue cooking until they are tender but still retain some firmness, approximately 15 minutes.

Remove the potatoes from the boiling water with a slotted spoon and let them cool down.

Once cooled, use a vegetable peeler to remove the skin from the potatoes and then grate them into long, thin strips.

In a large nonstick frying pan, melt 3 tablespoons of unsalted butter over medium heat.

Add a layer of grated potatoes and a layer of shredded cheese, then sprinkle with salt and pepper to taste.

Repeat the layers by adding another layer of potatoes and cheese, followed by a sprinkle of salt and pepper.

Dot each layer with the remaining 3 tablespoons of butter, making sure to cover every surface evenly.

Sprinkle 2 tablespoons of hot water over the top layer, cover the pan with a lid, and cook over low to medium heat until the bottom layer is golden brown.

Carefully flip the potato cake with a spatula and cook the other side until it is also golden brown.
