Ingredients
- 1 1/2 tablespoons olive oil
- 1 large onion, cut into 1/4-inch slices
- 3 cloves garlic, minced
- 1 tablespoon red pepper flakes, or to taste
- 1/2 cup chicken broth
- 1 bunch Swiss chard, tough stems removed and leaves cut crosswise into 1 1/2-inch slices
- 1 pinch salt
- 12 (6 inch) corn tortillas
- 1 cup crumbled queso fresco cheese
- 3/4 cup salsa
Instructions
1
Preheat a cooking vessel over an intermediate heat setting, using olive oil to coat the surface. Introduce the onion into the vessel and stir until it has undergone a transformation, becoming tender and golden in color, approximately 10 minutes. Incorporate the garlic and red pepper flakes into the mixture, stirring until aromatic, roughly 1 minute. Introduce the chicken broth, Swiss chard, and salt into the mixture, stirring until well combined. Cover the vessel and decrease heat to a low setting. Allow the ingredients to simmer until nearly tender, around 5 minutes. Remove the lid and increase heat to a medium setting, stirring until the liquid has evaporated, approximately 5 minutes. Discontinue heat and set aside.
2
Heat a cooking vessel over an elevated heat setting, using high heat to warm the surface. Warm tortillas in the vessel for approximately 1 minute on each side. Fill the warmed tortillas with the chard, and top with the queso fresco cheese and salsa.
