Swiss Chard Pasta
Ingredients
  • 1/3 pound whole-wheat spaghetti
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 bunch Swiss chard, chopped
  • 1 teaspoon capers
  • 1 teaspoon lemon juice, or to taste
  • salt and pepper to taste
  • 1/4 cup grated Parmesan cheese, or to taste

Fill a large container with salted water, making sure not to overdo it. Next, place the pot on high heat and bring the water to a vigorous boil. Once boiling, gently add spaghetti into the pot and return it to a rolling boil. Continue cooking the spaghetti uncovered, occasionally stirring it with a spoon, until it reaches your desired level of tenderness but still retains some firmness in the center, taking around 8 minutes. Remove the spaghetti from the pot using a colander and drain it thoroughly.

In a separate large pan, heat some oil over medium heat. Add minced garlic and cook until it becomes soft and fragrant, about 1 minute. Introduce Swiss chard into the pan and cook it some more until its stems are tender, stirring occasionally. To help steam the chard, you can use some of the hot pasta water and cover the pan with a lid.

Now, combine the cooked spaghetti with the Swiss chard mixture. Add some hot pasta water to loosen the capers and stir well. Season your dish with a squeeze of lemon juice, some salt, and black pepper to taste. Finally, sprinkle some grated Parmesan cheese on top of your spaghetti and Swiss chard mixture to serve.
