Sweet Walnut Shrimp
Ingredients
  • 1 cup water
  • 2/3 cup white sugar
  • 1/2 cup walnuts
  • 4 large egg whites
  • 2/3 cup mochiko (glutinous rice flour)
  • 1 cup vegetable oil for frying
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon canned sweetened condensed milk
Instructions
1
Collect all necessary components.
2
Combine water and sugar in a small saucepan over high heat. Bring the mixture to a rolling boil, then introduce walnuts into the pot. Simmer for 2 minutes, followed by draining and placing the walnuts on a cookie sheet to air dry.
3
Beat egg whites in a medium-sized bowl until they become light and airy. Mix the mochiko until it reaches a thick, dough-like state.
4
Heat oil in a heavy, deep skillet over medium-high heat. Dip shrimp into the mochiko mixture, then fry in batches within the hot oil until they turn golden brown, approximately 5 minutes.
5
Utilize a slotted spoon to remove the shrimp from the oil and drain them on paper towels.
6
Combine mayonnaise, honey, and sweetened condensed milk in a medium-sized serving dish. Add the fried shrimp and mix until they are evenly coated with the sauce.
7
Sprinkle candied walnuts on top of the shrimp and serve.
