Ingredients
- 3 large carrots, cubed
- 1 large turnip, cubed
- 3 tablespoons softened butter
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup white sugar
- 2 eggs
- 1/2 cup milk
- 2 tablespoons white sugar
- 1/4 teaspoon ground cinnamon
Instructions
1
Firstly, heat your oven to the desired temperature of 350 degrees F (175 degrees C).
2
Next, take a 2 quart casserole dish and apply a thin layer of grease to it.
3
Then, place the carrot and turnip cubes into a large pot and immerse them in salted water. Bring the mixture to a rolling boil over high heat, followed by a reduction in heat to a lower medium setting, with the lid securely on top. Allow the vegetables to cook until tender, which should take approximately 20 minutes.
4
After draining the cooked carrots and turnips, permit them to air dry for a short period of time.
5
Then, return the cooked carrots and turnips to the pot, and thoroughly combine them with butter, salt, flour, and 1/4 cup of sugar using a mashing motion.
6
Meanwhile, whisk together eggs and milk in a separate bowl until well blended, then incorporate this mixture into the mashed carrot mixture until fully combined.
7
Next, transfer the blended mixture to your prepared casserole dish.
8
To add a finishing touch, combine 2 tablespoons of sugar with cinnamon in a small bowl and sprinkle this mixture evenly over the top of the carrot mash.
9
Finally, bake your casserole in the preheated oven until the top has slightly thickened and begun to exhibit a golden brown hue, which should take approximately 45 minutes.
