  • 1 cup white sugar
  • 1/3 cup water
  • 1 pinch coarse sea salt, or to taste
  • 1 pinch ground cinnamon
  • 1 pinch chili powder

Preheat your oven by preheating it, or use the 'bake' function on your oven if available.

Prepare a baking surface by coating it with a non-stick substance or placing a flexible, heat-resistant mat on the surface.

Combine peanuts, sugar, and water in a large, heavy pan over medium heat.

Stir the mixture continuously until the liquid has evaporated and peanuts start to develop a crust with the hardened sugar; this should take approximately 5 minutes.

Decrease the heat to a lower setting and continue stirring, scraping the bottom of the pan to evenly distribute the syrup as the sugar begins to melt and darken in color, resulting in a deep caramel hue; this process should take around 10 minutes.

Occasionally tilt the pan away from the heat source to prevent burning and allow the peanut mixture to darken evenly.

Immediately remove the pan from the heat once the peanuts have achieved a deep, golden color; stir.

Sprinkle sea salt and cinnamon or chili powder over the peanuts.

Transfer the peanuts to the prepared baking surface, allowing them to cool completely before breaking up any clumps that form.
