Ingredients
- 2 tablespoons vegetable oil
- 1 pound skinless, boneless chicken breast halves - cut into 1/2 inch pieces
- 2 carrots, julienned
- 2 cloves garlic, pressed
- 1 teaspoon ground ginger
- 4 shallots, chopped
- 1 bell pepper, slivered
- 1 (20 ounce) can pineapple chunks in natural juice, liquid drained and reserved
- 1/2 cup water
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon white vinegar
- 1/2 teaspoon red pepper flakes
Instructions
1
Preheat your cooking vessel by heating the oil over a medium-high flame; sear the chicken and carrots in the hot oil until they reach an internal temperature that indicates the chicken is fully cooked and the carrots are soft, approximately 5 minutes. Introduce the aromatic ingredients - garlic and ginger - into the sizzling oil; allow them to cook for another minute. Incorporate the shallots and bell pepper into the mixture, cooking for an additional 1 minute.
2
Combine 3 tablespoons of the liquid that was set aside from the canned pineapple with the pineapple chunks, water, soy sauce, cornstarch, vinegar, and pepper flakes; blend this mixture into the chicken and vegetable combination, stirring constantly until the sauce thickens.
