Sweet Sesame Chicken
Ingredients

  • 3 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon sesame oil
  • 1/2 cup cold water
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons salt, divided
  • 3/4 teaspoon garlic powder, divided
  • 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
  • 1 egg
  • 3/4 cup all-purpose flour
  • 1/2 cup cold water
  • 1/2 cup cornstarch
  • 2 tablespoons avocado oil
  • 1 1/2 teaspoons baking powder
  • peanut oil for frying
  • 1/2 tablespoon toasted sesame seeds

Combine honey, tomato paste, apple cider vinegar, Sriracha sauce, and sesame oil in a medium-sized bowl.

Mix the ingredients thoroughly until they are well combined.

Combine cold water, cornstarch, and a small amount of salt in another bowl; whisk until the mixture is smooth. Add this to the honey sauce mixture and blend well. Set it aside for later use.

Sprinkle a pinch of salt and some garlic powder over the chicken pieces.

In a separate bowl, whisk an egg until it's smooth. Add any remaining salt and garlic powder to the egg mixture; mix well. Gradually add some flour, followed by a mixture of water and cornstarch; whisk until smooth. Add avocado oil and baking powder to the egg mixture; mix well.

Heat 3 inches of peanut oil in a deep, wide pot until it reaches 325 degrees F (165 degrees C).

Take half of the chicken pieces and coat them evenly with the batter mixture. Use a spoon to scoop out tablespoonfuls of chicken and batter, making sure not to overcrowd the pot. Fry in batches until the chicken pieces are golden brown and cooked through, about 1 minute per side. Transfer them to a plate lined with paper towels. Check the oil temperature between batches.

Pour the honey sauce mixture into a large skillet and bring it to a simmer over medium heat. Let it cook for 3 to 4 minutes, then add all the chicken pieces to the sauce. Toss them around until they're well coated. Sprinkle some sesame seeds on top of the chicken pieces.
