Heat a pot of water over medium heat, carefully monitoring the temperature until it reaches a rolling boil. Next, gently add the rhubarb to the boiling water and let it cook for 2 minutes, or until it becomes tender. Remove the pot from the heat and carefully pour the rhubarb into a colander placed in the sink. Allow it to cool down completely before proceeding.

Combine the cooled rhubarb, diced apple, chopped green onions, freshly squeezed lime juice, a drizzle of honey, and sliced jalapeno pepper in a large bowl. Mix everything together until it's perfectly incorporated and you have a beautifully blended mixture.
