Sweet Potato Gnocchi Pasta
Ingredients
  • 2 (8 ounce) sweet potatoes
  • 1 egg
  • 1 clove garlic, pressed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 cups all-purpose flour
Instructions
1
Heat the oven to its highest temperature setting, which is 350 degrees F (175 degrees C).
2
Place the sweet potatoes in the preheated oven and bake until they are tender when pressed with your finger, approximately 30 minutes.
3
Once done, take the potatoes out of the oven and allow them to relax for 15 to 30 minutes.
4
Remove the skins from the cooled potatoes and place them in a large bowl or press through a kitchen gadget to extract the flesh.
5
Combine the mashed potato flesh with an egg, minced garlic, salt, and a pinch of nutmeg in the bowl.
6
Gradually add flour to the mixture, stirring until you achieve a smooth and pliable dough.
7
Prepare a large container of water by adding salt to taste, then bring it to a rolling boil.
8
Simultaneously, prepare the gnocchi: On a lightly floured surface, roll out the dough into several long, cylindrical shapes.
9
Cut these logs into 1-inch pieces.
10
Once the water has reached a boil, carefully drop the dough pieces into it.
11
Cook for about 2-3 minutes or until they rise to the surface.
12
Using a slotted spoon, transfer the cooked gnocchi to a serving dish and keep them warm until you're ready to serve.
