Ingredients
- 1/2 sweet potato, peeled and diced
- 1 1/2 cups spelt flour
- 1 cup rolled oats
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 2 very ripe bananas, mashed
- 1/2 cup sunflower seed oil
- 1/2 cup white sugar
- 1/3 cup chopped pitted dates

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. To prevent the muffin cups from sticking, lightly coat them with a non-stick spray or line them with paper liners.

In a small saucepan, combine diced sweet potatoes and enough water to cover them. Place the pan over high heat and bring the mixture to a rolling boil. Continue cooking until the sweet potatoes are tender, which should take around 10 minutes.

Once cooked, drain the sweet potatoes and set them aside to cool down.

Meanwhile, in a separate bowl, combine the spelt flour, oats, baking soda, and cinnamon. Mix these dry ingredients together until well combined.

In another bowl, mash the bananas with a fork and mix them with oil and sugar until smooth. Combine this banana mixture with the dry ingredients just until they form a moist batter.

Fold in the dates and cooked sweet potatoes into the banana mixture, taking care not to overmix.

Divide the muffin mixture evenly among the 12 muffin cups.

Bake the muffins in the preheated oven for about 18 minutes, or until a toothpick inserted into the center of one of the muffins comes out clean.

After 18 minutes, remove the muffins from the oven and let them cool in the pan for 10 minutes. Finally, transfer the muffins to a wire rack and allow them to cool completely.
