- 2 cloves garlic, minced
- 2 teaspoons minced fresh ginger root
- 1 (15 ounce) can chickpeas, drained
- 1 (14.5 ounce) can diced tomatoes
- 1 (14 ounce) can coconut milk
- 1 sweet potato, cubed
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon red chile flakes
- 1 cup baby spinach

Preheat a skillet over medium heat, allowing the oil to warm up. Sauté the onion, garlic, and ginger in the hot oil until they become tender and fragrant, taking around 5 minutes.

Add the chickpeas, tomatoes, coconut milk, and sweet potato to the skillet, stirring well.

Allow the mixture to come to a boil, then decrease the heat to low and let it simmer for about 15 minutes or until all the ingredients are tender.

Season with a blend of spices, including garam masala, cumin, turmeric, salt, and chile flakes.

Just before serving, add a handful of spinach leaves to the skillet.
