- 2 pounds sweet potatoes
- 3 (8 ounce) packages cream cheese, softened
- 7/8 cup white sugar
- 1/3 cup sour cream
- 1/4 cup heavy whipping cream
- 3 eggs, room temperature
- 3/4 cup packed brown sugar
- 1/4 cup butter
- 1/4 cup heavy whipping cream
- 1 cup chopped pecans

Preheat your oven to a high temperature of 350 degrees Fahrenheit, or 175 degrees Celsius.

In a bowl, combine crushed graham crackers, one-quarter cup of granulated sugar, and one-quarter cup of melted butter. Use your hands or a spoon to press the mixture into the bottom of a 9 1/2-inch round springform pan. Place it in the oven for ten minutes, then remove and set aside.

Leave your oven preheated.

Place the sweet potatoes in a baking dish and bake until they can be easily pierced with a knife, approximately one hour. Allow them to cool enough to handle, peel, and blend into a smooth puree.

In a separate bowl, beat the cream cheese with three-quarters cup plus two tablespoons of granulated sugar until it reaches a smooth consistency. Mix in the sour cream, one-quarter cup of heavy cream, and one-and-a-half cups of sweet potato puree. Beat in the eggs one at a time, blending well after each addition.

Pour the filling into the crust you prepared earlier.

Bake in your preheated oven at 350 degrees Fahrenheit until a tester inserted near the center comes out clean, approximately one hour. The center may still be slightly jiggly.

Turn off your oven and let the cake stand for one hour with the door slightly ajar.

In a small saucepan, combine brown sugar and one-quarter cup of butter or margarine over low heat. Stir until the sugar dissolves, then increase the heat and bring to a boil. Mix in one-quarter cup of heavy cream, followed by nuts. Pour the hot topping over the cheesecake.
