Ingredients
- 2 1/2 pounds sweet potatoes
- 1 teaspoon vegetable oil, or as needed
- 3/4 cup dark brown sugar
- 1/2 cup heavy whipping cream
- 1/4 cup melted butter
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup rolled oats
- 2 teaspoons dark brown sugar
- 1 tablespoon all-purpose flour
- 1/8 teaspoon ground cinnamon
- 2 tablespoons cold butter
- 2 cups miniature marshmallows
Instructions
1
Begin by preheating your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.
2
Next, take each sweet potato and gently rub it with a small amount of vegetable oil to prevent sticking. Place the potatoes on a baking sheet lined with parchment paper.
3
Once the sweet potatoes are in the oven, bake them until they're tender and easily pierced with a fork, typically taking about an hour. Remove the potatoes from the oven and let them cool slightly.
4
Reduce the oven temperature to a moderate level of 350 degrees Fahrenheit or 175 degrees Celsius.
5
When the sweet potatoes have cooled enough to handle, carefully scoop out their flesh and transfer it to a large mixing bowl. Discard the sweet potato skins.
6
Use an electric mixer to beat the sweet potato flesh until it's smooth and creamy.
7
Measure out 6 cups of mashed sweet potatoes into the mixing bowl, then add in 3/4 cup brown sugar, 1/2 cup cream, 1/4 cup melted butter, 1/8 teaspoon ground cinnamon, and a pinch of salt. Mix until well combined.
8
Transfer the sweet potato mixture to an 8x8-inch baking dish.
9
In a separate bowl, use a food processor or blender to finely grind 1 cup of rolled oats. Add 2 tablespoons brown sugar, flour, and a pinch of cinnamon to the bowl with the oats. Use a pastry blender or fork to cut in 2 tablespoons of cold butter until the mixture forms a crumbly texture.
10
Sprinkle the oat mixture evenly over the sweet potato mixture in the baking dish.
11
Bake the sweet potatoes and oatmeal streusel in the preheated oven until they're heated through and the topping is lightly browned, taking about 70 to 80 minutes. Remove from the oven and immediately sprinkle with marshmallows. Let stand for about 10 minutes, allowing the marshmallows to melt and become gooey.
