Ingredients
- 5 pounds sweet potatoes, scrubbed
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup white sugar
- 1/3 cup honey
- 1/3 cup light brown sugar
- 1 3/4 teaspoons salt, or to taste
- 3/4 teaspoon freshly grated nutmeg, or to taste
- 3 large eggs, lightly beaten
- 2 teaspoons vanilla extract
- 3 cups warm milk
- 1 tablespoon unsalted butter, softened
- 1 cup light brown sugar
- 1 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter
- 1 cup pecans, chopped
Instructions
1
Firstly, preheat your oven to a medium-high temperature of 350 degrees F (175 degrees C).
2
Next, prepare the baking sheet by lining it with a thin layer of foil or parchment paper to prevent sticking.
3
Then, place the potatoes on the prepared baking sheet and bake in the preheated oven until they are extremely tender, requiring a cooking time of 1 to 1 1/2 hours.
4
After removing the potatoes from the oven, allow them to cool down for a short period of about 5 minutes before proceeding.
5
Now, transfer the peeled sweet potatoes into a large bowl fitted with an electric mixer and its corresponding beaters or whisk attachment. Begin mashing the sweet potatoes on low speed to initiate the process.
6
Add 1/2 cup of softened butter and mix until it is fully incorporated into the sweet potatoes.
7
Then, incorporate white sugar, honey, brown sugar, 1 3/4 teaspoon of salt, and 3/4 teaspoon of nutmeg into the mixture. Continue to blend until everything is well combined.
8
Next, add eggs and vanilla to the bowl and beat on medium speed for 2 minutes.
9
Reduce the mixer speed to low and gradually add the heated milk, mixing until it is fully incorporated.
10
Taste the mixture to see if any adjustments need to be made regarding salt and nutmeg levels.
11
Prepare a 9x13x2-inch baking dish by greasing it with 1 tablespoon of softened butter.
12
Pour the potato mixture into the prepared baking dish and set it aside.
13
To create the topping, combine brown sugar, flour, cinnamon, nutmeg, and salt in a mixing bowl. Mix well until everything is fully incorporated.
14
Using your fingers, work the chilled butter into the mixture until it resembles oatmeal with small pieces of butter still present.
15
Stir in the pecan pieces and mix until everything is well combined.
16
Finally, sprinkle the topping mixture evenly over the top of the sweet potatoes and bake in the preheated oven until it is golden brown, crisp, and the sweet potatoes are set but still slightly loose in the center, requiring a cooking time of 30 to 45 minutes.
