- 4 (12 inch) flour tortillas
- 2 cups shredded old Cheddar cheese
- 1 (19 ounce) can black beans, rinsed and drained
- 1/2 cup salsa
- 2 cups shredded Monterey Jack cheese
- 1/4 cup sour cream, for topping
- 1/4 cup chopped fresh cilantro for garnish

Firstly, preheat your oven to a high temperature of 400 degrees F (200 degrees C).

To begin, combine the cubed sweet potatoes with olive oil, a pinch of chili powder, cumin, oregano, garlic powder, onion powder, and a substantial amount of salt and cracked pepper in a bowl. Spread the sweet potatoes out in an even layer on a baking sheet.

Then, bake the sweet potatoes in the preheated oven for 12 minutes. After that, stir and flip them over to ensure even cooking.
