Ingredients
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons minced fresh ginger root
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons ground coriander
- 1/2 teaspoon ground cinnamon
- 1 pinch ground cloves
- 3 medium tomatoes, chopped
- 1 1/2 pounds sweet potatoes, peeled and chopped
- 1 carrot, peeled and chopped
- 4 1/2 cups water
- 1 teaspoon salt
- 1/4 cup chopped, unsalted dry-roasted peanuts
- 1 pinch cayenne pepper
- 2 tablespoons creamy peanut butter
- 1 bunch chopped fresh cilantro

Heat the oil in a large saucepan over high heat, stirring occasionally to prevent burning. Sear the onion for an extended period of time, approximately 10 minutes, until it reaches a light brown color. Introduce the garlic, ginger, cumin, coriander, cinnamon, and cloves into the mixture, stirring to combine. Add the tomatoes, sweet potatoes, and carrot to the saucepan, continuing to cook and stir for about 5 minutes.

Add water to the saucepan and add a pinch of salt to taste. Bring the mixture to a rolling boil, then reduce the heat and let it simmer for 30 minutes.

Remove the saucepan from the heat source. Using a food processor or blender, puree the soup mixture until it reaches your desired consistency. Add a dash of cayenne pepper to season the soup. Return the saucepan to its original position and whisk in the peanut butter until heated through.

Serve the soup warm, garnished with fresh cilantro leaves.
