Sweet Potato and Ham Soup
Ingredients
  • 5 cups chicken stock
  • 3 1/2 cups peeled and diced sweet potatoes
  • 3/4 cup diced cooked ham
  • 1/3 cup diced celery
  • 1/3 cup finely chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped carrot
  • 1/4 cup corn
  • 1 tablespoon chopped garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon ground black pepper, or to taste
  • 1/2 teaspoon salt
  • 5 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 2 cups milk
  • 3/4 cup shredded Cheddar cheese

Combine the chicken stock with diced sweet potatoes, thinly sliced ham, chopped celery, and minced onion in a large stockpot; heat it up to a rolling boil.

Reduce the heat to a moderate level and let it simmer for 10-15 minutes, or until the sweet potatoes are tender.

Add sliced bell peppers, grated carrot, frozen corn kernels, minced garlic, chopped fresh basil, and dried parsley flakes to the soup; continue to cook until all the vegetables are softened, taking around 5-10 minutes.

In a separate saucepan, melt butter over medium-low heat; using a fork, mix it with flour until well combined.

Continue to cook and stir the mixture until it thickens, approximately 1 minute.

Gradually add milk into the butter-flour mixture, stirring constantly until it's smooth and free of lumps; keep cooking over medium-low heat for another 4-5 minutes, or until it reaches the desired consistency.

Stir in grated Cheddar cheese into the milk mixture until fully melted and blended; then, slowly add it to the soup.
