  • 1 pound pork tenderloin, trimmed and cut into 1-inch pieces
  • 1/2 cup reduced-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 10 bamboo skewers
  • 2 teaspoons vegetable oil, or as needed
  • 3 cups cubed fresh pineapple
  • 2 red bell peppers, cut into cubes
  • 3 green onions, thinly sliced
  • 1 teaspoon sesame seeds

Combine the pork, soy sauce, rice vinegar, brown sugar, sesame oil, lime juice, Sriracha, ginger, and garlic in a large container with a tight-fitting lid. Seal the bag and mix everything together until it's fully incorporated. Place the container in the refrigerator to allow the flavors to meld, stirring occasionally for about an hour.

Meanwhile, take a few minutes to prepare your skewers. Soak the wooden or metal skewers in water for 20 minutes before using them, as this will prevent them from catching fire when exposed to the heat.

While the marinade is working its magic, preheat your grill to a medium-high temperature. Lightly brush the grates with a small amount of oil to prevent sticking.

Thread the skewers by alternating chunks of marinated pork, pineapple, and red pepper. Discard the marinade and proceed to cook the skewers on the preheated grill, turning them over every 2 minutes or so until they achieve a nice char and the pork is cooked through.
