- 2 tablespoons celery salt
- 2 tablespoons chopped fresh basil
- 2 tablespoons vegetable oil
- 1 (12 pound) whole turkey
- 1 (12 ounce) jar honey

Heat the grill to its highest temperature setting, preparing it for outdoor cooking.

Soak wooden chips in a container filled with water and position them adjacent to the grill.

Combine sage, pepper, celery salt, basil, and oil in a bowl to create the herb mixture.

Carefully remove the turkey's neck and giblets, then rinse and pat dry the bird. Place it in a large, disposable roasting pan and coat evenly with the herb mixture.

Position the turkey breast-side down in the roasting pan, covering it loosely with aluminum foil to prevent drying.

Place the turkey in the preheated grill and add a few wood chips on top of the coals. Close the lid to trap heat and cook for 1 hour.

Add a handful of soaked wood chips to the fire, stirring them into the coals. Drizzle half of the honey over the turkey and cover it again with foil, closing the lid to continue cooking.

Continue grilling until the turkey reaches an internal temperature of 165 degrees F (74 degrees C), indicated by an instant-read thermometer inserted into the thickest part of the thigh.

Leave the turkey on the grill, removing the foil to flip it over so the breast is facing upwards. Baste the turkey with the remaining honey and cook, uncovered, for an additional 15 minutes.
