Ingredients
- 1 1/2 cups butter or margarine, softened
- 1 cup white sugar
- 2 eggs
- 6 tablespoons orange juice
- 1 tablespoon vanilla extract
- 2 teaspoons baking powder
- 4 1/2 cups all-purpose flour
- 1 (12 ounce) can poppyseed filling

Combine the butter and sugar in a large bowl using an electric mixer until they are perfectly blended. Continue mixing until the mixture is smooth and even.

Next, incorporate one egg at a time into the bowl, beating it well after each addition. Then, add in the orange juice and vanilla extract, stirring until everything is fully incorporated.

Add the baking powder to the mixture, followed by the flour. Gradually incorporate the flour until a cohesive dough forms.

Cover the dough and refrigerate it for at least 2 hours to allow the flavors to meld together.

Before baking, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease the baking sheets with a thin layer of oil.

Roll out the dough on a lightly floured surface to an even 1/4-inch thickness. Use a cookie cutter or a drinking glass to cut the dough into 3-inch circles, then place them on the prepared baking sheets.

Spoon a small amount of poppyseed filling onto the center of each dough circle. Use your fingers to pinch the sides of each circle, covering as much of the filling as possible.

If desired, refrigerate the cookies on the baking sheets before baking to help them retain their shape.

Place the cookies in a preheated oven and bake until they are lightly golden brown, taking 8 to 10 minutes in total.
