- 2 eggs, separated
- 1/2 cup heavy whipping cream
- salt and freshly ground pepper to taste
- 1 quart vegetable oil for frying, or as needed
- 2 tablespoons cane syrup, or as desired

Combine the dry ingredients, including flour and baking powder, in a bowl and incorporate corn kernels. In a separate container, whisk together egg yolks and cream until well combined, then add this mixture to the corn mixture; season with salt and black pepper for added flavor.

Using an electric mixer, whip egg whites until they become light and airy, forming stiff peaks in a separate bowl. Gently merge the egg whites into the batter, taking care not to deflate it.

Heat a substantial amount of vegetable oil in a deep skillet to a depth of 3 inches and preheat it to 375 degrees F (190 degrees C).

Carefully drop small portions of the batter into the hot oil, 2 to 3 tablespoons at a time, and cook until they turn golden brown on both sides, taking approximately 2 to 3 minutes per side.

Once cooked, remove the fritters from the oil with a paper towel and serve them drizzled with cane syrup.
