Ingredients
- 1 cup blue cornmeal
- 1 cup all-purpose flour
- 5 teaspoons baking powder
- 1/4 cup white sugar
- 1 pinch salt
- 2 eggs, beaten
- 1 cup milk
- 1/2 cup butter

Preheat your oven to the optimal temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).

Rub a non-stick cooking spray or melted butter onto the interior of a 9x9-inch baking pan to prevent sticking.

Mix together cornmeal, all-purpose flour, baking powder, granulated sugar, and a pinch of salt in a large bowl.

Using an electric mixer or whisk, sift the dry ingredients three times to ensure they're well-blended.

In a separate bowl, whisk together the eggs and milk until smooth. Gradually add this mixture to the dry ingredients, stirring until everything is fully incorporated and there are no lumps.

Set the batter aside to allow it to rest for a few minutes.

Place the butter from step 2 into the prepared baking dish and let it melt in the oven.

Once the butter has melted, pour it into the cornmeal mixture and stir until everything is well combined.

Transfer the batter to the prepared baking dish.

Bake on the center rack of your oven for 30-35 minutes, or until the edges of the cornbread have pulled away from the sides of the dish and a toothpick inserted into the center comes out clean.
