Ingredients
- 2 cups white sugar
- 1 cup butter, softened
- 4 eggs
- 1 teaspoon vanilla extract
- 5 cups all-purpose flour
- 2 tablespoons baking powder
- 1 (18 ounce) can koshi an (sweetened red bean paste)
- 1/4 cup evaporated milk, or as needed
Instructions
1
Preheat your oven to the desired temperature of 375 degrees Fahrenheit (or 190 degrees Celsius for those using metric measurements).
2
Next, prepare your baking surfaces by coating them with a thin layer of grease to prevent the cookies from sticking.
3
In a large mixing bowl, combine sugar and butter using an electric mixer until they have reached a smooth and creamy consistency.
4
Add eggs one at a time to the bowl, mixing until each egg is fully incorporated before adding the next.
5
Once all eggs have been added, incorporate vanilla extract into the mixture and continue to beat until well combined.
6
In a separate bowl, combine flour and baking powder.
7
Slowly incorporate the dry ingredients into the butter mixture, mixing thoroughly after each addition until a smooth dough forms.
8
Before handling the dough, make sure to dust your hands with flour to prevent sticking.
9
Take small portions of the dough and shape them into balls, approximately the size of walnuts.
10
Place each ball onto a floured surface and use your fingers to shape them into circles, making sure the center is thicker than the edges.
11
Using your thumb or index finger, create a small indentation in the center of each circle and fill it with 1 1/2 teaspoons of your desired filling.
12
Gather the edges of the dough circle around the filling and press them together to form a seal.
13
Place the sealed cookies on the prepared baking sheets, leaving about 2 inches of space between each cookie.
14
Brush the tops of the cookies with a small amount of evaporated milk to add moisture and shine.
15
Bake the cookies in your preheated oven until they have reached a lightly browned top, approximately 15 minutes.
