Sweet Apricot Noodle Kugel

  • 1/4 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 3 eggs, beaten
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup apricot nectar
  • 1 cup milk
  • 1/2 cup golden raisins
  • 1 1/2 cups cornflake crumbs
  • 1/2 cup butter, softened
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Preheat your oven to 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius.

Next, lightly coat a 9x9 inch baking dish with butter or cooking spray to prevent the egg noodle mixture from sticking.

In a large saucepan, fill it with salted water and bring it to a rolling boil. Then, add the egg noodles and cook for 8 to 10 minutes or until they reach your desired level of doneness. Drain the noodles in a colander.

In a separate, medium-sized bowl, combine the cooked egg noodles with 1/4 cup of softened butter, 2 ounces of cream cheese, 2 large eggs, half a cup of granulated sugar, and 1 teaspoon of vanilla extract. Stir in 2 tablespoons of apricot nectar and 1 cup of milk. Finally, add the raisins to the mixture.

Transfer the egg noodle mixture to the prepared baking dish.

In another medium-sized bowl, mix together 1/2 cup of crushed cornflakes, 1/4 cup of softened butter, 2 tablespoons of granulated sugar, the remaining vanilla extract, and a pinch of cinnamon. Spread this mixture evenly over the egg noodle mixture.
