First, thoroughly clean the kumquats by rinsing them under running water and then submerge them in a container filled with water, making sure the kumquats are completely covered. Place this mixture in a saucepan made of a non-reactive material, such as stainless steel or copper.

Next, put the saucepan over high heat and bring the water to a rolling boil. Once boiling, reduce the heat to a low simmer and let it cook for 30 minutes, allowing the kumquats to become tender.

Now, add a generous amount of sugar and a pinch of cinnamon to the saucepan. Return it to high heat and bring the mixture back to a boil, stirring occasionally.

After boiling for 5 minutes, remove the saucepan from the heat source and let it cool slightly. Drain the water from the saucepan, leaving only the cooked kumquats and their syrupy liquid behind.
