Ingredients
- 1 tablespoon vegetable oil
- 1/2 Vidalia or other sweet onion, sliced
- 1 1/2 pounds collard greens - rinsed, trimmed and chopped
- 1/2 cup water
- 5 tablespoons melted butter
- 3 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon grated fresh ginger root
- salt and freshly ground black pepper to taste
Instructions
1
Preheat a large skillet over medium heat, allowing the oil to warm up. Sauté the onion in hot oil until it becomes translucent and softens, taking around 5 minutes. If necessary, cook the collard greens in batches until they start to wilt slightly and fit comfortably within the skillet. Introduce water into the mixture, then continue cooking, stirring occasionally, until the greens have turned a vibrant color and become tender, spanning 5 to 7 minutes. Be vigilant throughout the process and adjust the heat as needed to prevent the greens from burning.
2
During this time, prepare a serving bowl by whisking together melted butter, vinegar, honey, and ginger.
3
Once the greens have finished cooking, drain them in a colander to remove excess water.
4
Add the cooked greens to the bowl and toss with the vinegar mixture, ensuring they are evenly coated. Season with salt and pepper to taste; serve the greens warm.
