Sweet and Spicy Rib Rub
Ingredients
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1/4 cup seasoned salt
  • 2 tablespoons paprika
  • 2 tablespoons ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 4 racks pork spareribs

Combine the white sugar, brown sugar, seasoned salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper in a sealed container; mix until the ingredients are well blended.

Thoroughly coat both sides of each rib rack with the spice mixture, ensuring an even distribution.

Preheat your outdoor grill to a medium heat setting and lightly brush the grill grates with oil to prevent sticking.

Position one rib rack, meaty-side facing downwards, in the center of the main grill rack; cook for 5 minutes before moving it to the far side of the top grill rack, with the meaty-side now facing upwards. Repeat this process with the remaining rib racks.

Arrange the rib racks on top of the grill shelf, with their meaty sides facing outwards and stacked at an angle. Directly below the ribs, turn off the heat; on the other burner, set it to a low setting. Close the grill lid and cook for 30 minutes.

Flip the ribs so that the side closest to the flame is now facing away from it, and the meaty-side remains facing forward. The rib rack that was initially in the front position is now moved to the back. Continue cooking until the outsides are crispy and the meat is tender, approximately 5 hours, flipping every 30 minutes.

Slice the cooked ribs into small chunks.
