Sweet and Spicy Pork Stir Fry
Ingredients
  • 5 tablespoons olive oil
  • 1/4 cup rice wine vinegar
  • 2 tablespoons minced garlic
  • 1 tablespoon brown sugar
  • salt and pepper to taste
  • 4 boneless pork loin chops, cut into bite sized pieces
  • 1/4 cup blanched slivered almonds
  • 5 tablespoons vegetable oil
  • 3 tablespoons finely chopped fresh ginger root
  • 1 tablespoon hot chile paste
  • 5 tablespoons teriyaki sauce
  • 1 green bell pepper, cut into strips
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 2 tablespoons chopped fresh mint

Combine olive oil, rice wine vinegar, minced garlic, brown sugar, salt, and black pepper in a large glass or ceramic bowl. Mix well to create a uniform blend. Add pork pieces and gently stir to coat the meat evenly. Cover the bowl with a lid and let it sit at room temperature for 30 minutes to allow the flavors to meld.

Heat a large wok over medium heat and add sliced almonds. Cook until they turn golden brown, releasing their fragrance into the air. Transfer the toasted almonds to a separate bowl and set them aside for later use.

Remove the pork pieces from their marinade, allowing any excess to drip off. Set the meat aside on a clean surface. Discard the remaining marinade, as it's no longer needed.

Heat vegetable oil in the wok over medium-high heat. Add the pork pieces, minced ginger, and chili paste. Stir in the teriyaki sauce to combine, then increase the heat to high. Cook, stirring constantly, until the pork is cooked through and white. Add sliced bell peppers to the wok and stir-fry until most of the liquid has evaporated, leaving a savory sauce behind. Top with toasted almonds and fresh mint leaves for garnish.
