- 2 1/2 pounds boneless country-style pork ribs, cut into 3/4-inch pieces
- 1 1/2 cups fresh sweet cherries, pitted and cut into quarters
- 2 tablespoons chopped fresh cilantro
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon onion powder
- 3 tablespoons honey
- salt and pepper to taste

To soften the vegetables, cook and stir the onion, green bell pepper, green onions, jalapeno pepper, and garlic for about 10 minutes.

Then add the pork, cherries, cilantro, lime juice, chili powder, cumin, and onion powder to the saucepan.

Cover the saucepan and lower the heat to a gentle simmer, cooking until the pork is fully cooked through and no longer pink, while the vegetables and cherries release their juices, which takes about 30 minutes.
